Sennos M3
+ Octent

We combine the Octent control platform with Sennos M3 fermentation sensors to close the full loop: the M3 detects what's happening inside the tank in real time, and Octent acts automatically — no human intervention required.

Gravity
The heart of fermentation. Shows sugar conversion over time and reveals yeast efficiency and attenuation.
pH
A predictable drop signals active fermentation and a clean flavor profile. Deviations can indicate infection or a stalled ferment.
Temperature
The primary lever for controlling flavor and fermentation speed. Detects chiller issues or stuck solenoids.
Pressure
Offers a window into CO₂ production. Detects dangerous spikes before they damage yeast or the tank.
Dissolved O₂
Critical at the start of fermentation, problematic at packaging. Prevents oxidation that shortens shelf life or degrades flavor.
Conductivity
A "total load" measurement. Alerts to supply variations, grain changes, or incorrect salt additions.

When my imperial stalled I saw it right away and was able to act in time.

We work with
producers who ferment.

We know your process, your vocabulary, and your specific challenges.

Beer
🍺 Beer
Less time in tank, more turnover. Early detection of stalled fermentations. Optimize dry hopping, spunding, and yeast harvesting.
Cider
🍎 Cider
Cider fermentation is sensitive to temperature and pH. Precise control from apple must to finished product, batch after batch.
Kombucha
🍵 Kombucha
The SCOBY reacts to any variation. pH control at every phase, immediate deviation detection, and full traceability.
Spirits
🥃 Spirits
Distillate quality starts at fermentation. Total control over the wash before it ever reaches the still.

Measurable results.

Brewery Project
Academic Brewery · Temperature Control
UC Davis Brewing Program
The brewing program at the UC Davis Dept. of Food Science and Technology installed 16 ½-bbl conical fermenters with glycol jackets. The challenge: give students and brewers precise, remotely accessible temperature control — without relying on basic manual controllers.

Winery Project
Winery · Fermentation and Temperature Control
Concha y Toro
The Chilean winery, one of the largest in the world, deployed automatic temperature control, automatic pumpovers, and airsparge across a cellar with 56 tanks. The challenge: eliminate batch-to-batch variability, reduce reliance on manual labor, and optimize refrigeration energy consumption during harvest.
